Meat Laboratory Associate
 
 
Position Summary
The Department of Animal and Dairy Sciences is currently seeking a Meat Laboratory Associate to assist in the research management and production operations of the Mississippi Agricultural and Forestry Experiment Station (MAFES) Meat Science and Muscle Biology Laboratory. The Meat Science and Muscle Biology Laboratory is a 15,000 sq. Ft. state-of-art processing facility.

The successful candidate will be responsible for assisting in all aspects of the Meat Science and Muscle Biology laboratory management. These responsibilities include but are not limited to:

  1. Harvest, fabrication, processing, distribution and retailing of meat products.
  2. Assist with research projects, extension programs, and teaching activities.
  3. Fulfill USDA (FSIS) inspection, HACCP, and SSOP requirements.
  4. Assist in the training and supervision of undergraduate and graduate students.
  5. Maintain a safe and clean facility.
  6. Operation and maintenance of specialized equipment.

Multiple units on campus utilize the Meat Science and Muscle Biology Laboratory, but primarily by the Department of Animal and Dairy Sciences and The Department of Food Science, Nutrition and Health Promotion. The successful candidate will be expected to work with faculty from both Departments to meet the teaching, research and extension mission of Mississippi State University.

In addition to the job requirements listed above, the successful candidate will have the opportunity to explore an advanced degree as well as coach and lead the Department of Animal and Dairy Sciences meat judging team.

 

Qualifications:

Qualifications include a Bachelor of Science in animal or dairy science or a closely related field with six months to one year of experience in meat science. Preference will be given to candidates with a Master’s degree in animal and dairy science or closely related field and meat laboratory management or meats judging experience.
